I recently received some treats as a special gift from Senza Gluten, a 100% dedicated gluten-free bakery and restaurant in New York City. One of the gluten-free items I received was gluten-free panini bread. And I knew immediately what to make with it.
Using this spinach pesto recipe and some fresh mozzarella cheese, a delicious grilled cheese sandwich was born!
You'll need the following ingredients for this grilled cheese:
-gluten-free bread of your choice (I used Senza Gluten panini bread)
-fresh mozzarella cheese
-pesto, like this spinach pesto recipe, or a favorite pesto that you enjoy.
There's nothing complicated here to make this sandwich. You toast your bread, spread on some pesto, and then melt your cheese. You can also embellish this sandwich with other ingredients. Try some sliced tomato (if that's your thing), a piece of chicken breast breaded with Aleia's gluten-free breadcrumbs, or maybe some other cheeses, like provolone.

Gluten-Free Pesto Grilled Cheese Recipe
Gluten-Free Pesto Grilled Cheese
A cheesy sandwich. It's good. Try it.
Ingredients
- 8 slices of gluten-free bread
- ¼ cup olive oil or butter
- 4-5 tablespoons of pesto
- 8 slices of fresh mozzarella cheese
Instructions
Toast the bread in the toaster oven or in a frying pan melted with 1 tablespoon of butter or olive oil. Spread on pesto and add cheese. Cook until the cheese is melted and gooey, if using the stovetop. Or, heat in the microwave at 30-second increments until melted.
Optional: Add additional toppings, such as Sliced tomato, grilled chicken breast, or other cheese. Serve warm.
