I had to admit, I was seriously excited by the prospect of homemade gluten-free bread. And in this post, I'm sharing all the details of this baking adventure in this gluten-free sourdough course review!

Gluten-Free Sourdough Online Course Review
My Background In Baking Bread
Years ago, I used to make homemade gluten-free bread from Bob's Red Mill in my breadmaker, which was delicious. As other gluten-free brands on the market improved, like Canyon Bakehouse, I didn't bother baking it anymore. But the one bread I could never find was gluten-free sourdough.
When loaves of sourdough started flooding my social media channels, I did some research. If there were regular sourdough recipes, there had to be gluten-free sourdough recipes, right?
But after hours of reading multiple food websites and blogs, I felt ten times more confused, and had absolutely no idea where to start. I'm no baking novice, and I knew from my own experiments that different gluten-free flours produce different results. Getting the combination just right is crucial to successful gluten-free baking!
While some websites had suggestions for making sourdough with a pre-made gluten-free flour mix, I just didn't think that would cut it. If baking is an exact science, as they say, gluten-free baking is like quantum physics or molecular chemistry!
But then, just when I thought there was no hope for my sourdough mission, my friend Meg (Boston Gluten Free on Instagram) began posting the most incredible, glorious photos of gluten-free sourdough. Her photos of rolls, breads, even gluten-free AND vegan sourdough loaves left me drooling.
How on earth did she do it?
As it turns out, Meg had tried baking sourdough bread with recipes she found online. Eventually, both tired and frustrated that nothing was coming out the way she hoped, Meg discovered something that would change everything I knew about gluten-free baking: an online gluten-free sourdough course with Sourdough Schoolhouse!
The Course: Sourdough Schoolhouse
Sourdough Schoolhouse was created by Shannon Peckford, a baker from British Columbia that is the queen of sourdough! Through her knowledge of baking sourdough bread from scratch, she provides step-by-step courses teaching the art of sourdough. Everything you need to know about making sourdough, including the proper tools and kitchen equipment, troubleshooting your sourdough starter, making bread, pastries, and more - all are a part of Sourdough Schoolhouse.
And the best part about Shannon's courses is that she took it one step further. Shannon teamed up with Marisa Froese, a homesteading and farming mama from Nova Scotia, and created a gluten-free sourdough course! Marisa's gluten-free sourdough method was how Meg was making such amazing bread, and that's where I learned it too.
In the last three months, I've gotten a really good handle on gluten-free sourdough, and that's all from this course. Let's dive into the specifics, shall we?
My Honest Review: Worth It.
This was my first experience with gluten-free baking from scratch, and I was a little intimidated in the beginning. My usual baking included using a pre-mixed flour blend, yeast, baking powder, or baking soda. I had no background in sourdough at all.
But after taking the time to read through everything, the PDFs provided, and the videos in each section, I gained more confidence. The course really does break everything down step-by-step, with tutorials, methods, recipes, and troubleshooting. There is a specific Facebook Group for the Gluten-Free course, where you can compare notes, share photos, and ask questions. All of these aspects made the course much easier.
The biggest challenge, I think, was getting my sourdough starter just right. I had to play around with locations, such as by my oven, in my oven (turned off), and on my countertop, to see what worked. I also had to change up the container and the type of cover I used. All of these conditions depend on your kitchen temperature and environment, so be patient, and don't panic!
The one thing I did not expect was the HUGE amount of sourdough discard you accumulate by feeding your starter! Even though I tried to keep up with it by baking when I could, with the frequent feedings, it began to overflow! My advice: use up the discard as you accumulate it. I made sweet scones, savory scones, banana bread, and pancakes, but still didn't put a dent in it.
Note: you don't have to keep the discard, but it's easily usable for baking recipes, and a great way to reuse it! Just be prepared for a LOT of it when you begin feeding your starter regularly.

From my perspective, here are a few other things to keep in mind.
First evaluate what you have in your kitchen before buying anything you might not need. Then, if you start making sourdough bread a hobby, then I'd invest in some of the fancier equipment.
I would recommend a dutch oven to bake your bread. There are two methods suggested in the course for baking the bread, and I think the one that calls for the dutch oven is the easiest. In addition, you'll need a kitchen scale to measure your ingredients. This is super important! Here's the one I have, which has been working great for four years now.
The course does offer a Mise En Place kit, too, which includes proofing buckets, weck jars, a bench scraper, and their top recommended baking materials for the course. This is totally optional, and I would suggest waiting to see how much baking you do before investing in it.

As per my friend Meg's suggestion, I bought my flours online from Anthony's or Bob's Red Mill, as both companies batch test their flours for gluten-free. The flours from Anthony's come in very large bags, which is great in the beginning, especially when building your starter. You go through quite a lot of flour!
Frequently Asked Questions About Gluten-Free Sourdough Course
Do I need to be an experienced baker to take this course?
I don't think so. If you can bake muffins, cookies, quick breads, etc., you can definitely make these recipes! However, just expect them to be a bit more intensive and with extra steps than a simple banana bread recipe, like this one.
How long did it take until you could bake bread with your sourdough starter?
I had some issues with my starter in the beginning, and it wasn't getting enough air. After five days of feeding it with no real activity, I repurposed it into a new jar with a cloth cover, and saw a major improvement. It took a good two weeks until it was ready to be used, so plan accordingly. Once you begin the course, you have to wait a few weeks before you can actually start making bread.
Are there dairy-free or vegan options in the course?
Yes! The recipes include dairy-free and vegan options, and the results are still delicious!
Do the recipes taste good?
They really, really do! The scones and pancakes that you bake with the discard are scrumptious, but the breads are fantastic. They have a slightly sour (no surprise there!) taste, but not too overpowering, with excellent texture, crust, and they don't fall apart. The bread makes great sandwiches, too. And when the breads come out of the oven, warm, browned, and crisp, you'll feel unstoppable in the kitchen!
Were the lessons easy to understand?
As a teacher, I'm a bit biased here when it comes to learning from others, so know when I say this, I mean it. YES. Both Marissa and Shannon are wonderful teachers. They add their own wisdom and experience as bakers into each lesson, and go slowly to explain each step meticulously. I found everything easy to understand by following along with the videos and PDF's.
Are the breads quick to make?
Short answer: No.
Long Answer: The bread recipes take preparation and planning - usually a good 24 to 48 hours, depending on the status of your starter. Remember, your starter is the leavener in the bread, and what will make it rise, meaning it has to be prepped before you use it in a recipe. It's much more complex than just adding a teaspoon of baking powder, as there are many steps. Though the breads will take more time to execute, these recipes are absolutely worth every minute once you see the final products!
Note: The sourdough discard recipes are relatively quick, like scones and pancakes. I made them a ton.
How much does it cost?
