About This Gluten-Free Recipe
If you haven't tried cauliflower gnocchi, it's quite tasty and super simple as a base for dinner or a main meal. While we often have cauliflower gnocchi for meatless Mondays with lots of roasted vegetables, I decided to add in gluten-free sweet Italian sausage to make this gluten-free cauliflower gnocchi bake!
Gluten-Free Gnocchi Recommendations
Since most of us don't have time to make gluten-free gnocchi from scratch, this is a great alternative. This gluten-free cauliflower gnocchi from Whole Food's is certified gluten-free, and tastes amazing. It plumps up nicely in the oven, getting golden brown, and has a great taste and texture once cooked.
But if you're looking for just regular, potato-based gluten-free gnocchi (also vegan!) try Le Veneziane, which is equally delicious and comes from Italy. That also works in this recipe!
What About Trader Joe's Frozen GF Gnocchi?
You can also use the cauliflower gnocchi from Trader Joe's, and as of October 2022, it is now labeled gluten-free and vegan! Trader Joe's certifies that anything labeled with a "Gluten-free" description meets the FDA's 20 ppm or less requirement. Please refer to the notes in the recipe card for how to prepare this recipe with frozen gnocchi instead of shelf-stable.
Ingredients You Will Need For This Gnocchi Bake
-Gluten-Free Gnocchi (Shelf-Stable)
-Gluten-Free Sausages
-Vegetables you love to roast (I do carrots, brussel sprouts, onions, typically)
-Olive oil, salt, pepper, & dried herbs (I do dried rosemary/thyme)
-Parmesan Cheese, for garnish
How To Make This Cauliflower Gnocchi Bake Recipe
You'll first brown the sausage on the stovetop, so it cooks quicker in the oven. Then slice it into small bite-sized pieces. Then to a large roasting pan, you'll add the browned sausages (they will finish cooking in the oven) gnocchi, and chopped vegetables and toss everything together with some olive oil, salt, pepper, and dried herbs. Cook until the vegetables are softened and golden brown. Then sprinkle with parmesan cheese and enjoy. Yum!

Gluten-Free Cauliflower Gnocchi & Vegetables
Gluten-Free Cauliflower Gnocchi, Vegetables & Sausage
A yummy collection of tasty ingredients for a protein-packed dinner!
Ingredients
- 1 package (16 oz) fresh, shelf stable cauliflower gnocchi, or any other GF gnocchi
- 3-4 carrots, chopped
- 10-12 brussel sprouts, halved
- 1 package sweet Italian sausage, chopped into small pieces
- Extra virgin olive oil
- sea salt & freshly cracked pepper, to taste
- dried rosemary or another dried herb of choice
- Parmesan cheese, for garnish
Instructions
Preheat oven to 450 degrees Fahrenheit. Brown the chopped sausages on the stovetop over medium heat, for 4-5 minutes, until browned on each side. Don't worry about them being fully cooked - they will finish cooking in the oven.
Chop vegetables into small, similar-sized pieces, so they cook evenly. Toss with the sausages, fresh gnocchi, 1-2 Tablespoons of extra virgin olive oil, salt & pepper to taste, and 1-2 teaspoons of dried rosemary or herb of choice. Place vegetables, gnocchi, and sausages on a large baking sheet, spreading them out.
Roast the vegetables, gnocchi and sausages for 20 minutes, turning them halfway. Check for tenderness in the vegetables by piercing them with a fork and cut into the sausages to make sure they are done.
Sprinkle with freshly grated parmesan cheese, and enjoy!
Notes
Using Frozen Gnocchi: If you use Trader Joe's GF frozen gnocchi , just cook on the stovetop rather than in the oven, according to the package directions. Then toss with the veggies and sausages at the end. Enjoy!
