About This Avocado Toast Recipe
Avocado toast has become synonymous with brunch in the last few years. It wasn't until my sister-in-law made it one summer that I looked at her plate and thought, "That's probably realllllly good." Since then, my obsession with avocado toast continues - gluten-free, of course.
There are a number of different ways you can have avocado toast, but why not keep it simple? The original method I tried avocado toast is still my favorite, but I like to spice things up a bit with Trader Joe's Everything But The Bagel seasoning. It adds just the right amount of flavor and takes this gluten-free avocado toast to the next level of tastiness.
What You'll Need For Avocado Toast
Gluten-Free Bread: I use Canyon Bakehouse. After years of experimenting with different gluten-free loaves of bread, my go-to is now Canyon Bakehouse. Their bread tastes the closest to the whole wheat bread I grew up eating as a kid. It doesn't break apart, works well for sandwiches, and even bread pudding.
Avocado: Make sure it's ripe. That's the only challenge to avocados - they have to be ripe, otherwise, the flesh will be too hard and it won't taste right!
Everything But The Bagel Seasoning: I buy mine from Trader Joe's, but you can definitely make your own with a few spices at home. See the recipe card for tips on how to do this.
Eggs: We'll make two fried eggs to go on top of the avocado and bread. You can cook these however you prefer - over easy, medium, over medium, runny yolks, or not - completely up to you.
Hot Sauce or Tabasco: Totally optional, but adds a nice kick to the toast! Make sure it is gluten-free.
How To Make Avocado Toast
Toast up your bread as you cook the eggs to your liking.
Spread the avocado over the bread and mash. Top with EBTB seasoning (Everything But the Bagel).
Add the eggs on top and more seasoning. Sprinkle with hot sauce. Enjoy!

Gluten-Free Avocado Toast with Egg
Gluten-Free Avocado Toast
My favorite avocado toast - gluten-free!
Ingredients
- 2 pieces gluten-free bread, like Canyon Bakehouse
- ½ ripe avocado, smashed with a fork
- 2 eggs, fried and cooked to desired
- coconut oil, for frying
- Trader Joe's Everything But the Bagel Seasoning
- salt & pepper
- Hot Sauce or tabasco, optional
Instructions
Heat 1 tablespoon coconut oil in a frying pan over medium heat. When the oil is hot, add the 2 eggs. Season lightly with salt and pepper. Set bread to toast so both items are done cooking around the same time.
Fry eggs to desired doneness (I like mine over-hard). Remove toast to a plate. Spread mashed avocado on both pieces of toast, then top with one egg on each. Sprinkle Everything But The Bagel Seasoning on top of everything. Dash a little hot sauce if you want extra kick. Enjoy!
Notes
If you don't have Everything But The Bagel Seasoning, use a mix of sea salt, garlic powder, onion powder, sesame seeds, and poppy seeds. Or just use whatever spices you like!

This is best served fresh! Avocado will turn brown with time, and the bread will turn soggy. If you decide to try it, so I'd suggest squeezing lemon juice over the top of the avocado and keeping it tightly sealed with foil or wrap.
