About This Leeky Chicken Pizza Recipe
While visiting Vermont this summer, my sister-in-law told us about a pizza from Folino's in Burlington called the "Leeky Chicken". After trying a gluten-free version of it, I vowed to come up with an equally tasty gluten-free version I could have at home!
Using one of my go-to frozen pizza crusts (Ugly's Gluten-Free, local to Massachusetts), I decided to make it happen!
Ingredients You Will Need
The ingredients for the Leeky Chicken on Folino's website are listed as:
olive oil base, three cheese blend, buffalo chicken, leeks, bacon, ranch. And that's exactly what you'll need!
-Olive Oil
-Cheeses (I use a blend of mostly Colby or Monterey Jack)
-Buffalo Chicken (I used pre-cooked chicken breast tossed with Frank's)
-Leeks
-Cooked Bacon
-Ranch Dressing (I like Ken's, labeled gluten-free)
And of course, you need a gluten-free pizza crust!
Gluten-Free Pizza Crust
I prefer Ugly's Gluten-Free or Zeia Foods, both local to New England and 100% gluten-free. You could also try Trader Joe's gluten-free pizza dough, Schar gluten-free pizza dough, or for a fantastic homemade option - try making pizza from scratch with No Gluten, No Problem! How To Make Leeky Chicken Pizza
Follow the directions according to your pizza crust for how to prepare it. Add the olive oil for the base, the cheese, followed by the leeks, buffalo chicken, and bacon, and then drizzle the ranch on top. Delish! You get the spice from the buffalo chicken, creaminess of the ranch, and cheesy and oniony goodness with the cheese and leeks.
And then there's bacon. Need I say more?

Gluten-Free Leeky Chicken Pizza
Recipe inspired by Folino's in Burlington, Vermont!
Ingredients
- 1 gluten-free pizza crust of your choice
- olive oil, for brushing
- 1-2 cups Colby, Cheddar, or Monterey Jack cheese, shredded (you can also use a combination of cheeses)
- 4 strips of cooked bacon, diced small
- 1 cup cooked chicken breast, diced small, tossed with ¼ cup gluten-free buffalo sauce ( I use Frank's)
- 1-2 leeks, rinsed, dried, and sliced thin
- Ranch dressing (verify gluten-free), to drizzle on top - I use Ken's
Instructions
Prepare gluten-free pizza crust according to package instructions & preheat oven accordingly. Add toppings in order listed above and bake! Enjoy!
