Salads can be seen as really boring.
But when you dress it up with chicken, bacon, hard-boiled eggs, avocado, croutons, and shredded cheese? It's definitely not boring anymore. It's packed with protein and tastiness. And a drizzle of buttermilk ranch dressing makes it even better!
That's what you'll find in this gluten-free cobb salad recipe, so your next bowl of salad doesn't have to be a boring bowl of greens!
Ingredients You Will Need For This Salad
-Greens or lettuce: I used romaine lettuce for this salad.
-Grilled chicken: I used leftover chicken we had baked the night before.
-Cooked bacon: Make sure to check the package to verify it is gluten-free.
-Shredded cheese of choice. Lately I've been on a kick for Cabot Monterey Jack. You can use Cheddar, Monterey jack, Colby, whatever you like. I prefer to shred my own cheese for better flavor. Pre-shredded cheeses have anti-caking agents that can affect the taste! But yes, they are gluten-free.
-Avocado: Self-explanatory. Gotta love avocado!
-Hard-boiled eggs: I follow this recipe and they come out perfectly every time.
-Gluten-free croutons: My favorites are Gillian's Foods.
-Gluten-free ranch dressing: Ken's is gluten-free, so I typically buy that.
-Salt & pepper: to taste
How To Make Cobb Salad
There's really not much else to this salad. You'll need to pre-cook the chicken, bacon, and eggs, but the rest is all about the assembly. Add all of your toppings, the dressing, and then mix to combine. And it's so yummy!
Cobb salads typically are made a little differently, but I've adapted it to be with ingredients are pretty well-liked and versatile. Feel free to customize and add anything else you like!

Gluten-Free Cobb Salad
A tasty cobb salad packed with yummy ingredients.
Ingredients
- 2-3 cups lettuce
- 1-2 pieces of pre-cooked chicken, cut into strips
- ½ ripe avocado, diced
- 1-2 pieces of bacon, chopped
- ¼ cup cheese of choice, shredded
- 1-2 hard boiled eggs
- croutons, for garnish
- ranch dressing, to taste
