About This Salad Recipe
This simple salad packs the sweetness of pears, crunchiness of walnuts, and creamy goat cheese altogether into one. Pears have been arriving in our CSA shares recently on the end of summer/early fall, so I decided to use them up!
If you aren't a fan of having fruit in your salad, I completely understand. My husband doesn't care for fruit in salad either. But to my taste buds, I love the compliment of something salty and sweet. This salad gives me that taste pairing, which is why I love it so much.
Ingredients You Will Need
All you'll need to make this salad is:
-greens or lettuce of your choice (I love Little Leaf Farms here in Massachusetts)
-pears
-goat cheese
-chopped walnuts
-Additional toppings: gluten-free croutons, dried cranberries, if desired
If you'd like to add any additional ingredients, feel free! I sometimes add shredded carrots, sunflower seeds or pepitas, or red cabbage. You can make this salad as filling or as light as you prefer. You can even add some leftover grilled chicken too.
Dressing For This Salad
When it comes to salad dressing, I'm a firm believer that less is more. Blame it on my time in Spain, but all I need is a little oil and lemon! This salad only uses extra virgin olive oil and a squeeze of fresh lemon juice for dressing. But if you're looking for a light vinaigrette, check out this homemade dressing recipe.
How To Make This Pear & Goat Cheese Salad
Like most salad recipes, all you have to do is combine everything together into a bowl and toss. Then all that's left to do is eat up and enjoy!
