About This Grilled Cheese Recipe
Sometimes gluten-free comfort food can be as simple as a sandwich. And when you have an enormous amount of apples, it's a great way to use them up in something that doesn't require baking!
Ingredients You Will Need
Gluten-free sandwich bread: I use Canyon Bakehouse Heritage White. Looking for sandwich bread recommendations? Check out this post.
Cheddar cheese: I prefer Cabot as they are Vermont based (yay Vermont!) and lactose-free.
Apples: A tart apple adds a nice balance, but use whatever apple you prefer. I used ones from our local CSA share.
Bacon: Pre-cook the bacon beforehand. Double check the label is gluten-free. I use
Mayonnaise: Use it to brush on the outside of the bread to get it perfectly crispy and golden brown.
Optional- Tomatoes: I've just recently gotten on the tomato bandwagon after hating them with a passion for almost my entire life. But a grilled cheese with tomatoes is something else, so I'd definitely recommend adding them!
Tips For Making Grilled Cheese
This recipe is pretty dang easy, but I'll share a couple of extra tips for optimal tastiness:
Use mayo to coat the outside of the bread. I'm not a mayonnaise fan unless it's for aioli or chicken salad, but this tip really helps make the sandwich more decadent and brown up nicely in the pan.
Don't rush. You want the cheese to melt and get nice and gooey - so if the sandwich is already starting to brown, lower the heat so it stays warm.
Mix it up. Feel free to add any other toppings or sauces to make this your favorite sandwich. Try some mustard (double check it's gluten-free), tomato slices, turkey, or whatever floats your boat!
Grilled cheese sandwiches are best served warm and fresh, so I wouldn't recommended storing to reheat the next day. They only take a few minutes to make once you have all of your ingredients, so enjoy them while they are hot.

Gluten-Free Apple Cheddar Grilled Cheese With Bacon
Gluten-Free Apple Cheddar Grilled Cheese With Bacon
A really tasty sammich. Trust me.
Ingredients
- 2 slices of gluten-free sandwich bread, like Canyon Bakehouse
- 2-3 small slices of cheese, like from Cabot Cheddar block
- 2-3 slices of your favorite variety of apple
- 1-2 strips of gluten-free bacon, cooked
- 1-2 teaspoons of mayonnaise
- 1 Tablespoon unsalted butter, for greasing the pan
Instructions
Cook bacon according to package instructions and set aside. Slice your cheese and apples and set aside.
Heat a skillet or frying pan over medium heat. Add 1 tablespoon butter. While it heats up, coat one piece of gluten-free bread with 1 teaspoon mayonnaise. Place mayonnaise side down on the frying pan. Layer on the cheese, bacon, and apple, then top with another slice of mayonnaise coated gluten-free bread - making sure the mayo is on the outside this time.
Cook for 5 minutes, and when you notice the bottom piece of bread turning golden brown, carefully flip. Now, the other piece of bread with the mayo can get golden brown. Lower the heat if necessary to make sure the bread doesn't burn but the cheese gets nice and melted. Cook for another 4-5 minutes. Then remove from heat, turn off stove, slice and enjoy.
