As a pregnant mom with celiac disease who is due with baby #2 this December, AND has a toddler with egg and dairy allergies, I'm doing as much as I can NOW to prepare for postpartum life.
And one of these things is having my freezer stocked with simple, delicious, gluten-free meals I can put together in no time - and can easily be modified for my daughter.
So I've got a collection of 15+ my favorite recipes from the blog (and a few others!) that you can prep ahead of time for easy meals.

About This Blog Post
Some of these meals will mean you cook/prepare them beforehand, then freeze them for reheating later. Others will be the opposite - you prep everything beforehand, freeze/store it, and then cook when you're ready.

Having a combination of both of these takes some pressure off me for postpartum life. And maybe you can recognize this for your life too - no matter if you're going through postpartum, navigating a hard season, or just have no time to cook!
For example, if I just need a quick snack while breastfeeding baby, having a chocolate chip muffin on stand-by that's already baked will be an easy choice.
But if I'm beyond exhausted and have no capacity to cook dinner, but I'm craving a hearty meal in the thick of winter...
Then dumping everything into the crockpot one morning and having a hearty beef stew that night will be clutch. And, it will allow me to focus on what's most important - being a mom.
I hope these meals can give you more peace, clarity, and time for your future - whatever it holds!

How To Prep Gluten-Free Freezer Meals

I'll be honest - I'm not a huge meal prep gal.
I'm not someone who goes out on a Sunday, buys all of her groceries, then preps sides, mains, chops everything, then divides into containers, etc.
I just don't operate that way.
It's a struggle just to pack my lunch the night before a work day (lol) instead of leaving it for the morning of!
But I do remember when I was pregnant with Harper in the fall of 2023 that having a few meals prepped and ready to go in my freezer made a HUGE difference for those first few weeks of postpartum.
So I'm going to follow 3 simple steps to help me this time around while pregnant with baby #2.

1. Designate a day to prepare them
Yes - this will be the most challenging for me as I have a 20-month-old toddler running around, but it WILL help. Having a day to prep at least 1-2 of these, or even if I have to spread it out over a few days, will be key.
And I'd recommend the same to you if you are preparing these meals.
Have a set day or time you're going to designate as "meal prep" time. Put it in your calendar, tell your partner, get the shopping list, DO IT. That way, you don't keep putting it off as a "I'll do that sometime soon," but you actually can check it off.
I've also decided that if in the next 9 weeks I don't have the capacity to do a lot at once, I'll split them up and try to prep one meal per week.
2. Have a space in mind
Let's be honest - a side-by-side fridge/freezer is not ideal if you're meal prepping.
Our side-by-side fridge/freezer combo is extremely frustrating storage-wise (if you have one of these in your kitchen, you KNOW what I mean!)
When I was prepping meals before Harper arrived in the winter of 2024, food items were constantly falling, they were getting lost/buried in the back, and I felt like I had NO space at all.
I prepped a few things, but felt like I couldn't even do more if I wanted to because we simply did not have room.
So over the summer, I decided to do something about it! I purchased a standing freezer for our basement.
If you're curious, I bought it from Best Buy (I bought this one) over Labor Day weekend and got a big discount. It was recommended to me by my fellow gluten-free girl, Violet (Go follow her! Her recipes are DIVINE!)
And so far, it’s been great! It provides just enough extra space that I can move some larger items out of our small side-by-side fridge/freezer and still have room for my meal prep.

It keeps items super cold, works well, and is easy to clean. Plus, it's a stand-up freezer, not a chest one, so items don't get buried or lost.
So my suggestion to you?
Make sure you have SPACE for this project before you start. Whether it's a shelf in your freezer, a separate freezer like I have, or something else - just make sure you know WHERE these things are going.
It can save you a lot of frustration!
3. Label everything!
Label, label, label!
For whatever you are prepping, make sure you are clear on what the meal is, when you prepped it, and any instructions for cooking.
You don't want to come back to something later and wonder, "Wait, what temperature was I supposed to cook this?" or "Are these ready to go, or is there another step?"
Have everything listed on the food container/bag, or stick a post-it on top with everything you need.
That way, when you come back to these items 1, 2, or 3 months down the road, you can quickly and easily prepare what you'd like, without frustration or problems.
Materials & Supplies

You can choose to prepare your gluten-free freezer meals however you'd like.
However, these are the items I use when preparing food I'm keeping in the freezer long term.
- Large Gallon-sized bags: They are clutch for preparing soups or stews, and they can be laid flat for easy storage. I will also use aluminum foil for wrapping anything that doesn't fit into a bag or container.
- Sharpie: I use this to label everything on the outside of my bags or containers.
- Disposable containers or reusable ones: For larger casseroles, I'll likely get some disposable aluminum containers that I can throw away when finished. But for storing things like muffins or egg cups, I'll use a reusable container I already have in my kitchen.

Without further ado, let's get to the gluten-free freezer meals!
Note: Each gluten-free freezer meal will be classified as either a:
1) Cook First OR 2) Freeze First, Cook Later.
Gluten-Free Breakfast Ideas
Here are some breakfast ideas for your gluten-free freezer meal prep!
Banana Bread (1)

You can't go wrong with banana bread. It freezes really well, and you can customize it with chopped nuts, chocolate chips, actual bananas...the list is endless. It's always satisfying as a breakfast sweet treat or a snack - especially warmed up with a little butter.

Tips: Bake it beforehand (I do a double batch so I get 2 loaves). Then I wrap it in 2 layers of aluminum foil and label the outside. To defrost, just place in the fridge 24-48 hours before you are ready to eat. Microwave it for 15-30 seconds to soften.
Chocolate Chip Muffins (1)

These are my all-time favorite muffins on the blog, and I've experimented with a ton of them! They are also a perfect snack that freezes really well and reheats quickly in the microwave.

Tips: Bake them beforehand. Then, store in an airtight container or in a large gallon-sized bag and label appropriately. To defrost, just place it in the fridge 24-48 hours before you are ready to eat. Microwave it for 15-30 seconds to soften.
Egg Cup Mini Frittatas (1)

These egg cups are a perfect customized breakfast frittata - in mini form! Same size as muffins, and you can put any combination of protein, veggies, or cheese inside.

Tips: Make them beforehand (I do 2 batches, usually one with spinach/cheddar and another with bacon/sausage/bell pepper/onion). Then, store in an airtight container or a large gallon-sized ziploc bag and label appropriately. To eat, place one on a plate in the microwave and heat for 1-2 minutes.
French Toast Casserole (2)

This recipe goes viral EVERY time I share it on social media - and for good reason! It is the perfect holiday breakfast that you make ahead of time. And the best news? You can freeze ahead of time, too.

Tips: Prep everything for the casserole according to directions. Then, instead of placing it in the fridge overnight, wrap it tightly with foil and freeze it instead. Remove and bake according to the instructions when ready to eat. Just be mindful - if you are using a glass dish, let it come to room temperature first so it doesn't shatter.
Gluten-Free Soups & Stews
Beef Stew (2)

A cozy, hearty beef stew on a cold winter's day? Sign me up. For this one, you can prep everything beforehand and then dump it into the crockpot and cook. Plus, you can customize with veggies of your choice like potatoes, carrots, onions, peas, and more.

Potato Leek Soup (1)

This gluten and dairy-free soup is creamy and so delicious. Perfect with croutons, gluten-free baguettes, or even with some Brazi bites on the side.

Pumpkin Soup (1)

Gluten-free and vegan pumpkin soup is a Thanksgiving favorite of mine - and a staple at my Aunt Kate's house every holiday. It's got the perfect spices and just screams fall right at you!

Tips: Like the potato leek soup above, cook everything as listed in the recipe, but don't add the coconut milk. Label & freeze it in an airtight container or a large gallon-sized ziploc bag. Then, when ready to eat, defrost in the refrigerator for 24 hours, or pour items directly into a stockpot to reheat on the stove. Once reheated, add the coconut milk and puree until smooth.
Veggie Chili (2)

This one is probably the easiest gluten-free freezer meal. And you can dump everything right into the crockpot in the morning for a delicious and hearty chili that evening for dinner. Perfect with a side of white rice, cheese, avocado, or chives!

Tips: Prep everything (all veggies, beans, and spices) and mix in a large bowl. Then, transfer to a large gallon-sized ziploc bag, label, and freeze. When ready to eat, defrost the night before in the microwave, or pour items directly into the crockpot and heat according to package directions.
Gluten-Free Lunch & Dinner Meals
Crockpot Pulled Pork (2)

My husband Dylan's pulled pork recipe is a crowd-pleaser and another super-easy gluten-free freezer meal. With a homemade ketchup-based BBQ sauce and chopped onions, it cooks low and slow for a tender, mouthwatering pulled pork.

Tips: Prep the pork, chopped onions, and spices in a large bowl to combine. Then place everything in a large gallon-sized Ziploc bag. Label it appropriately and freeze. When ready to prepare, pour everything right into the crockpot and heat according to recipe instructions.
Crockpot Chicken Tacos (2)

This is the simplest taco recipe - chicken breasts, taco seasoning, and salsa. That's IT. You can use chicken tenderloins, too. I use Newman's salsa (labeled gluten-free) and my own taco seasoning (find that recipe here), and it comes out perfect every time.

Tips: Prep this recipe as if you were going to cook in the crockpot - but instead, put everything in a large gallon-sized ziploc bag (chicken breasts, jar of salsa, taco seasoning). Then, label and freeze. When ready to eat, defrost in the refrigerator for 24 hours or just pour contents into the crockpot.
Pot Roast (2)

Like the crockpot chicken tacos, this is another one that you can just prep all the ingredients, freeze, and cook when ready. It's super flavorful and creates a juicy and tender pot roast and veggies, all in the same pot.

Tips: Just like the crockpot chicken tacos, this is a pour all the ingredients into a bag and freeze recipe. Then, label appropriately and either defrost the night before you want to make, or pour directly in the crockpot & follow the recipe instructions.
Shepherd's Pie

Shepherd's pie is a cozy casserole - especially in the fall and winter months. This one you'll prepare as if you're going to bake in the oven, but instead, cover and freeze. Then bake when you're ready to eat it!

Tips: Cook everything according to the recipe instructions - but don't bake in the oven. Instead, wrap tightly in foil (2 layers), label, and place in the freezer. When ready to eat, bake directly according to recipe instructions. Be mindful, you may need to adjust the timing.
Italian Meatballs (2)

I absolutely LOVE these meatballs. I've frozen them both when cooked and uncooked and they always come out amazing. The fresh parmesan cheese in there makes them so scrumptious with pasta or rice!

Tips: You have two choices - prep the meatballs according to the recipe instructions, and freeze them uncooked. OR, you can bake them in the oven and freeze them cooked. Either way, reheating them, they still taste amazing. Just be sure to label the bag so you know if they are cooked (or not!). Then, bake according to recipe instructions if uncooked, or you can pour into a large pot with sauce and reheat on the stovetop.
Sheet Pan Chicken & Veggies

Sheet pan dinners are my saving grace - the options are endless, and you never run out of options of proteins/veggies/carbs. Whatever variety you choose, you could easily have 3-4 of these in your freezer by changing up the meat or the vegetables.

Tips: Chop all of your veggies, cut your protein, and season everything together in a large bowl. Then, pour into a large gallon-sized ziploc bag, label, and freeze. When ready to eat, defrost in the fridge for 24 hours, or just pour directly onto a baking sheet and cook according to recipe instructions.
Other Gluten-Free Freezer Meals To Try
Damn Delicious Mexican Street Tacos (2)
This recipe is a go-to for us on rotation for Taco Tuesdays. The only modification to make it gluten-free is to use low-sodium gluten-free soy sauce. Other than that, everything else is good! The steak is phenomenal. I'd prep everything - the steak/seasonings, and then pour them into a large Ziploc bag and freeze. Then just heat on the stove when ready to eat.
Pinch of Yum Coconut Tandoori Chicken (2)
This (and the recipe below) are the two I meal-prepped prior to our daughter Harper's arrival, and I'm SO glad I did. This one proved to be a BIG favorite for Dylan and me. We served it with white rice (made in our rice cooker, also a set it and forget it kind of meal) and it was SO good. Just as above, I stored everything in a large gallon-sized Ziploc bag.
Pinch of Yum Chicken Fajitas (2)
I really loved this recipe too - because it's versatile to create chicken and rice bowls with toppings like avocado and sour cream, OR you could turn them into fajitas with tortillas and cheese. We also used this recipe to make Greek-inspired bowls with tzatziki and roasted zucchini/tomato/onion. The seasoning is simple, and it freezes really easily. The Pinch of Yum website has great instructions for freezing & prepping ahead of time.
Cookie + Kate Baked Blueberry Oatmeal (1)
Baked oatmeal is a hearty and filling breakfast that you can customize with different fruits or nuts. I also love how it's easily modified to be dairy-free or egg-free, or even lower in sugar. This is the recipe I've been making for years now, and I always come back to it, but I switch up the blueberries for apples, bananas, chocolate chips, walnuts, etc. It also freezes well, and I top it with Greek yogurt.
